1/2 c Coconut flour
1 c Almond flour
1/2 t Salt
1/2 t Cinnamon
1 1/2 t Baking soda
1 T Maple syrup
3 Flax eggs*
1 t Vanilla extract
2 T Coconut oil
2 Bananas, mashed
1/4 c + 1 T Almond milk
- Mix dry ingredients in one bowl.
- Mix wet ingredients in a separate bowl.
- Slowly stir the wet ingredients into the dry ingredients.
- Pour batter into a greased muffin pan, distributing evenly.
- Bake for 20-25 minutes at 350 degrees. Stick a toothpick in a muffin to check doneness.
*Note: To make 1 flax egg, mix 1 T ground flax seed with 2.5 T warm water and let sit in refrigerator for 15 minutes (3 flax eggs=3 T ground flax seed + 7.5 T water).
