1 c oat flour
1/4 c coconut flour
1/4 c almond flour
1/2 c unsweetened shredded coconut flakes
1 teaspoon baking powder
1/2 teaspoon salt
1/2 c almond butter
1/4 c coconut oil
1/4 c honey
1 teaspoon vanilla extract
1/2 teaspoon almond extract
2 eggs
- Combine oat flour, coconut flour, almond flour, coconut flakes, baking powder, and salt.
- In a separate bowl, combine almond butter, oil, honey, extracts, and eggs.
- Add wet ingredients to dry ingredients.
- Form one inch balls with dough, then flatten to form cookie (cookies will not flatten on their own).
- Bake for 12 minutes at 350 degrees.
