½ c butter, room temperature
½ c sugar
½ c brown sugar
2 eggs
½ tsp vanilla extract
½ c flour
½ c whole wheat flour
½ tsp baking soda
½ tsp salt
1 tsp ground cinnamon
½ tsp ground nutmeg
1 ½ c quick cooking oats
¼ c dark chocolate, chopped
¼ c chopped pecans
- Cream butter, sugar, and brown sugar.
- Add egg and vanilla extract.
- In a separate bowl, combine, flour, whole wheat flour, baking soda, salt, cinnamon, and nutmeg.
- With mixer on low, add dry ingredients to wet ingredients.
- Once completely combined, add oats, chocolate, and pecans.
- Line a cookie sheet with parchment paper.
- Form cookie dough into one inch balls and place on cookie sheet.
- Bake for 9 minutes at 375 degrees. Makes about two dozen.
