Quinoa Egg Bowl

Breakfast for Dinner - Quinoa Style! 

Quinoa and sautéed veggies topped with parmesan cheese and an egg. So good! This dish is great for breakfast, but I like it for dinner because it's a little more intensive (time-wise and clean up-wise) than I usually have time for in the morning and it offers everything you need for dinner! The egg really makes this dish great, especially if you like your yolk a little runny!





1 c water
½ c quinoa
1 clove garlic
Olive oil
½ c chopped mushrooms
½ c chopped broccoli
¼ c chopped red bell pepper
2 Tbsp shredded parmesan cheese
1 egg
Salt
Ground black pepper

  1. Add ½ cup quinoa and 1 clove of garlic to 1 cup of boiling water.
  2. Simmer for 20 minutes or until all water is absorbed.
  3. Sauté ½ cup chopped mushrooms, ½ cup chopped broccoli, ¼ cup chopped red bell pepper in olive oil on low until veggies are soft.
  4. Add veggies to quinoa and stir.
  5. Put veggie/quinoa mixture in a bowl, top with Parmesan cheese.
  6. Fry an egg to your liking.
  7. Put egg on top of quinoa mixture.
  8. Add salt and pepper.
